When the sun is high, this sparkling lemonade made with Ceylon tea is the most refreshing thing we know. It is bright, tangy and not too sweet.
You will need (for four glasses)
- 3 heaped teaspoons Udarata black tea
- 300 ml freshly boiled water
- Juice of 3 limes
- 3–4 tablespoons sugar or kithul treacle
- 500 ml chilled soda water
- Ice, lime slices and mint to serve
Method
- Steep the tea in the hot water for four minutes, strain and stir in the sugar until it dissolves.
- Let it cool, then add the lime juice.
- Fill four glasses with ice and divide the tea between them.
- Top up with soda water, stir gently and garnish with lime and mint.
For a party, make the tea base a day ahead and keep it in the fridge. Add the soda water just before serving so it stays sparkling.
