Cardamom grows in the forests and hills of central Sri Lanka, and a few crushed pods turn an ordinary cup of milk tea into something special.
You will need (for two cups)
- 2 heaped teaspoons Udarata black tea
- 4 green cardamom pods, lightly crushed
- 250 ml water
- 250 ml milk
- Sugar or jaggery, to taste
Method
- Simmer the water and cardamom together for two minutes.
- Add the milk and heat until it steams — do not let it boil over.
- Turn off the heat, add the tea and steep for four minutes.
- Strain into cups, sweeten to taste and enjoy while hot.
Add a small piece of cinnamon or a slice of ginger for extra warmth.
