Kiri tea (milk tea) is served everywhere in Sri Lanka, from roadside kades to family kitchens. Traditionally it is poured from a height to make it frothy.

How to make it

  1. Brew a strong pot of Udarata black tea for 4 minutes.
  2. Warm fresh milk (or dissolve milk powder in hot water).
  3. Combine and pour between two jugs from a height until frothy.
  4. Serve with a piece of kithul jaggery on the side.

Take a bite of jaggery, then a sip of tea — that is the only rule.
